Recipe: Dr. Hall's "Doing the Most" Chili


Everyone has a Chili recipe, and I am no exception. Below is my recipe for "Doing the Most" Chili. The most time is spent chopping up things and waiting on things to saute/ brown. Once it is in the crockpot you walk away and live your life until the timer goes off.

I cook like this all the time so its nothing to me. I forgot to take photos. I will come back and add those later when I reheat the chili this week for lunch or dinner.

I only cook with ground turkey but you could totally use ground beef for this recipe.

This recipe makes enough for several meals. Boil up some spaghetti noodles if you have kids and want to stretch it even further!



Dr. Hall's "Doing the Most" Chili

Kitchen tools: 
  • Crock-Pot (Or Dutch Oven)
  • Good sharp knife & Cutting board
  • Carrot peeler
  • Cast Iron Skillet
  • Food Processor 
Ingredients:
  • 2 pounds ground Turkey
  • 3 strips thick-sliced bacon
  • 3 cloves garlic, chopped (or 3 tablespoons minced)
  • One whole onion, chopped
  • 3 stalks celery, chopped
  • 1/2 green pepper
  • 1/2 red pepper (optional)
  • 2-3 medium-sized carrots, peeled & chopped
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground Paprika
  • 1 teaspoon ground oregano
  • 1 teaspoon ground cinnamon
  • 1 teaspoon Lawry's seasoned salt
  • 1 teaspoon ground pepper
  • 1/4 teaspoon cayenne pepper
  • 2/3 cup sugar
  • 1 bay leaf
  • One 15-ounce can of kidney beans, drained and rinsed
  • One 15-ounce can of pinto beans, drained and rinsed
  • One 15-ounce can of Black beans, drained and rinsed
  • One 15-ounce can of corn, drained and rinsed
  • 2 15-ounce cans of diced or stewed tomatoes
  • 2 8-ounce cans of tomato sauce
  • Shredded Cheddar for serving
  • Ritz Crackers, for serving
  • Tortilla chips, for serving
  • a generous tablespoon of sour cream for serving
Directions
  1. Cut strips of bacon in half and fry in the largest Cast Iron skillet you have. set aside and keep bacon grease.
  2. Chop celery, carrots, & onion in the food processor on high until diced,
  3. Lower heat on skillet, then add onion, carrots, and celery, let saute for at least 20 mins.
  4. Add chopped peppers and garlic to the pan and stir together, heat for 5 minutes
  5. Raise heat to medium, then add ground turkey to skillet, on top of the mixture of vegetables,
  6. Stir mixture together until meat is brown
  7. Drain excess fat then season with all the seasonings (pepper, cumin, paprika, oregano, cinnamon, salt, cayenne, etc.)
  8. Stir together well,
  9. Prepare crockpot by adding beans, corn, tomato sauce, and diced tomatoes
  10. Add ground beef  and diced bacon to crockpot and stir together mixture, 
  11. Stir in bay leaf and sugar
  12. Cook on low for 5-6 hours at least
  13. Serve with shredded Cheddar, sour cream, chopped onions, tortilla chips, or ritz crackers, (or all of the above)
Caveat: Many of the spices and vegetables could be left out if you wanted a faster recipe. I never use canned chili sauce, but you could pare this down to onion, garlic, ground meat, chili powder, tomato sauce and beans for a serviceable quick recipe.

A friend of ours really likes eating at the establishment and it had been forever since we ventured that way. The restaurant was of course packed to the gills but we discovered the secret of the bar area where, if you can grab a table, you can jump the line and get seated faster.

Review: Zoup!

Today’s choice off the Breakfast Menu was Zoup!  Fresh Soup Company: Every now and again a friend will call me to sit down and bend my ear to their tales and troubles. Today was  one of those days where I found myself on the other side of the table while a friend laid out a personal issue. We decided on Zoup! at Stetson Square. It specializes in various soups. They let you taste them before you buy, so you have the chance to try over a dozen different soups. The soups were tasty but not spectacular. It was a pleasant experience for a quick lunch.
